For this week’s recipe I’m sharing one of my favourites. It’s not only delicious but super quick and easy to make, thus making it the perfect mid week dish when you need something yummy and filling. So let’s begin!
The ingredients you need for this recipe are:
* Chicken Breast
* Vegetables of your choice
* Oyster sauce
* Soya sauce (optional)
* Chilli sauce/ ketchup
* Red bird eye chilli (optional)
* Spring onion
* Vegetable/Chicken stock (optional)
Start off by heating up a tablespoon of oil in a big pan. Add 2 chopped up shallots and a few bird eye chillies, add as many as you want depending on how spicy you want your chicken to turn out. Once the onions turn translucent, add your chopped chicken breast and cook on a high flame for a few minutes until its fully cooked. You can spoke it with a fork to check if its cooked through.
Now you can add any vegetables that you like. I prefer adding green peppers, or any others that I have on hand. Once you’ve got everything in your pan, add a teaspoon of oyster sauce, a bit of soya sauce and a half a teaspoon of chilli sauce. These sauces will give the chicken an amazing flavour and a beautiful colour too. Then finally you can add chicken or vegetable stock to create a gravy. When it’s all done you can have this with boiled rice or even noodles, either way is delicious!
