Recipe of the Week: Chicken Karahi

I’m dedicating this week’s recipe to all my desi people on campus! I’m going to be writing up a very simple, yet delicious recipe for chicken karahi that anyone can recreate. So if you’re feeling a little homesick, or just in the mood for some spice this recipe will be perfect for you.

The ingredients you need for this recipe are:

Chicken Breast (2)
Ginger & Garlic
Tomatoes
Onion
Green chilli
Spices: Salt, red chilli powder, cumin powder, turmeric powder, garam masala
Coriander

Cooking Method:

Start by chopping 2-3 tomatoes into little cubes/chunks. Dice ginger and garlic and then chop one white onion into long, thin strips. To prep the chicken, cut it into small cubes as well.

Next, take a big pan and heat it up. Once heated add 2 tablespoons of oil; I recommend using either vegetable or sunflower oil. When your oil has heated add the onions and cook until they are translucent and soft, at this point add ginger and garlic as well. Cook it for a couple of minutes before adding the chopped tomatoes. Cook the tomatoes for 2-3 minutes until they are soft.

At this point, throw in your diced chicken and sprinkle half a teaspoon of all your spices before giving everything a really good mix. Then, put a lid on your pan and let everything simmer together for about 5 minutes while giving everything a mix again, in between.

Once you lift the lid, you’ll smell the beautiful aroma and your karahi is ready! Sprinkle some coriander to finish off and for some colour. You can have this with naan and also with rice!
